Vegan Black Bean Brownies


1 ½ cups black beans (1 15-oz can, drained and rinsed)

DSC_52442 tbsp cocoa powder or NibMor Original Drinking Chocolate powder

½ cup quick oats

¼ tsp salt

1/3 cup maple syrup or agave

2 tbsp sugar

¼ cup coconut oil

2 tsp pure vanilla extract

½ tsp baking powder

2/3 cup NibMor chocolate chunks (just break apart your favorite bar!)



  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine all ingredients except NibMor chocolate chunks in a food processor and blend until completely smooth.
  3. Stir in NibMor chocolate chunks.
  4. Pour mixture into a greased 8×8 baking pan.
  5. Bake for 15-17 minutes.
  6. Let cool for 10 minutes before serving.
  7. Enjoy!
