Agave, also known as the Maguey, grows in the harsh desert environment of North Central Mexico and has been used by the natives for over 9000 years. Agave Nectar is harvested from the heart of the living Agave plant where it secrets it's nectar.
An organic, vegan enzyme is added to break down the disaccharide sugar into fructose and dextrose. The human brain registers Agave Nectar as tasting approximately 1.4 times sweeter than refined sugar, offering an equivalent sweetness for nearly half the amount of carbohydrate calories.
For people needing to limit glucose consumption, Agave Nectar is a good choice due to its higher proportion of fructose and lower levels of glucose. Fructose does not stimulate digestive insulin secretion as do other sugars making it less disturbing to the glycemic index.
